Okay, had a few tweets and comments to post the info on my FAVORITE chicken recipe.
Basically, I am not a major cook. We are talking like, WAY NOT a major cook. This is like the MOST SIMPLE thing on the face of the planet.
I buy a bag of chicken strips. Usually the publix brand, but Tyson actually had a better price on my last grocery run. A bag for $5.99.
I wash the chicken strips and lay them in a 9x13 pyrex dish. I then put the following on it ON BOTH SIDES. Salt, pepper, Mrs. Dash, then I take a bottle of Zesty Italian dressing (to save money you can buy the wal-mart brand, that's what I use), put enough of the dressing to where it is just above the chicken (it's covering all stips), I then top it off with parmesan cheese, because I think everything needs parmesan chesse on it.
Put it in the oven on 375, for a good while. Sorry. I am not sure how long it stays in there, I just keep checking it, then about midway through cooking, again, sorry not sure on the time of that. :) I take it out, flip the strips over, and recoat with another helping of parmesan cheese.
Mmmmm, it is SOOOOO good. My grandmother use to cook this ALL the time and it's my favorite. I also take red potatoes in another pyrex dish and cube them up and mix them with loads of olive oil and ranch dressing mix and parmesan cheese and bake them at the same time, again, no clue on the time, I just watch it. The potatoes are SOOOOOOO good. I like when they get good and crispy and I don't mind doing the dishes when I cook this, because I make myself sick eating all the left over crusty pieces that are stuck to the side. Yummmmm.
I actually ended up getting this ready and just put it in the oven (chicken) and we will have it for lunch tomorrow. Our plans changed tonight. :) But it is REALLY good the second day after it sits in all the yummy juice.
Alright. I told you it wouldn't be good directions. Sorry. But the good news is, if I can do it, ANYONE can do it!
